Cinnamon Buns

Looking to improve on the first attempt about a month ago….


First the dough, it is a rich sweet dough, flour, milk, butter, caster sugar, an egg, yeast and finally a little vanilla extract, Dry ingredients mixed first then the milk, egg & vanilla…followed by the fun part kneading the dough for about ten minutes, then letting the dough rise

The dough rise was excellent

I prepared the filling a mix of sugar and cinnamon, I used light muscovado sugar and plenty of cinnamon if using spices I think is important the you really taste though not excessive.

I then rolled out the dough into a rectangle about 3 x 5, melted some butter which was then brushed on to the dough. I think one of the errors I did the first time I try this was I did not quite get the thickness quite right…it was a little too thick and not that rectangular :)

I then spread the filling over the dough

Then rolled the dough forming a sausage shape

This was then cut into 12 buns and placed on lightly olive oiled baking tray and after covering left to rise for another hour or so

Then into the oven for baking just of 25 minutes seem to work well

Left to cool…then finally a little icing, a mix of icing sugar, water and some more vanilla extract…might try a lemon icing in future
